Course 1
Spicy Bullfrog
Live bullfrog goes into a deep red broth of chili and peppercorn, finished with a handful of fresh herbs that cut the heat. Wood ear mushrooms, cucumber, and seaweed knots wait underneath, soaking up everything the frog leaves behind. Served on its own warmer so the last piece is as hot as the first.

Pickled Chili Bullfrog
Pickled chilies give this version a bright, sour edge that the plain spicy one doesn't have — sharper on the tongue, easier to keep eating. Thick cuts of frog stay springy in the broth alongside celtuce and scallion. Regulars who can't decide simply order one of each.

Garlic Butter Crawfish
Fresh crawfish are heaped under a blanket of minced garlic fried to a pale gold, buttery and fragrant rather than fiery. The garlic works into the shells while they cook, so the flavor is already there before you peel. Bring napkins and take your time.

Bullfrog and crawfish arrive live, vegetables are cut the same day, and our chili oil, pickled peppers, and peppercorn are chosen batch by batch rather than bought on price. Nothing sits in a warmer waiting for an order. That discipline is why a bullfrog broth here tastes layered instead of merely hot, and why the last of it is worth finishing with a bowl of rice.
Hand-pulled noodles are cooled, then tossed with shredded poached chicken, scallion, sesame, and a nutty chili dressing that coats without weighing them down. Cool, chewy, and quietly spicy — the dish that keeps the table going between rounds of hot food.

Fire-Blasted Double Crunch
Everything here happens in seconds: the wok goes screaming hot, then pork tripe and gizzard hit the oil with onion, celery, and fresh chili and come straight back out. Any longer and the crunch is gone. Timing is the whole dish, and our wok cook has it memorized.
